Licorice are extracted from licorice root, which grows in southern Europe, Iran, Iraq, China and other countries. The main ingredient in the root is glycoside, glycyrrhizin. You extract the root with water and further processing is done in several steps.

Licorice is used as flavoring, mainly in confectionery but also in ice cream products, for example.
